8 Roma tomatoes, quartered
50ml olive oil
Cracked black pepper
1 Chorizo sausage, sliced into rings 3mm thick
200g feta cheese
1 cup black olives
300g baby spinach leaves
30ml black cherry vinaigrette dressing (or another suitable vinaigrette dressing)
Preheat an oven to 170 degrees celcius.
Place the tomatoes into an oven proof dish and toss with the oil, salt and pepper to taste. Place the tomatoes into the oven and roast for 30 minutes, when done remove and set aside.
Heat a frypan over a medium heat and add the chorizo, lightly saute on both sides, remove and drain on absorbent paper then set aside.
Toss the feta with the olives, spinach vinaigrette dressing. Add in the tomatoes and chorizo and serve immediately.
